
Dark Chocolate Energy Balls

Ingredients
- 120 g oats
- 90 g chopped dates/raisins
- 60 g mixed seeds
- 4-5 tbsp peanut butter
- 3 tbsp honey
- 100 g 85% dark chocolate
Instructions
- Add all the ingredients except the dark chocolate to a large bowl. Mix well until combined.
- Roll the mixture into 9 even sized balls – if you feel the mixture is too sticky, add some more oats, if it is too dry, add a little more nut butter.
- Line a tray or plate with parchment paper and place the energy balls on top. Place in the freezer for 30 minutes to set.
- In the meantime, melt the dark chocolate in the microwave. (30 second intervals stirring in between).
- Remove the energy balls from the freezer and dip each ball into the chocolate. Evenly coat then use a spoon to carefully place back on the parchment paper. I like to top with a sprinkling of seeds/crushed nuts.
- Place the energy balls in the fridge for 10 minutes to set
- Enjoy 😉
Notes
These will store well in the fridge in an airtight container. Alternatively, you can freeze them for up to 3 months.
Potential add ins to mix things up:
- Coffee
- Crushed pistachios
- Almond butter
- Dessicated coconut
- Fresh pomegranate
