Ingredients
 

  • 2 sweet potatoes, cut into jenga shaped chips
  • 2 red onions, roughly chopped
  • 1 bulb garlic, head sliced off
  • 1 jarred roasted red pepper, sliced
  • 1 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp chinese five spice
  • 1 tsp ground coriander
  • ½ tsp chilli flakes
  • 1 tsp salt and pepper

Instructions
 

  • Preheat the oven to fan 180
  • Add the sweet potato jenga chips to a roasting dish along with the red onions, red pepper and garlic bulb.
  • Season with smoked paprika, chinese five spice, ground coriander, chilli flakes, salt, pepper and a drizzle of extra virgin olive oil. mix the spices into the vegetables really well.
  • Place in the oven for 45 minutes.
  • Enjoy – I like to serve mine with steak, fish or chicken and some steamed broccoli.
