Ingredients
- 2 sweet potatoes, cut into jenga shaped chips
- 2 red onions, roughly chopped
- 1 bulb garlic, head sliced off
- 1 jarred roasted red pepper, sliced
- 1 tbsp extra virgin olive oil
- 1 tsp smoked paprika
- 1 tsp chinese five spice
- 1 tsp ground coriander
- ½ tsp chilli flakes
- 1 tsp salt and pepper
Instructions
- Preheat the oven to fan 180
- Add the sweet potato jenga chips to a roasting dish along with the red onions, red pepper and garlic bulb.
- Season with smoked paprika, chinese five spice, ground coriander, chilli flakes, salt, pepper and a drizzle of extra virgin olive oil. mix the spices into the vegetables really well.
- Place in the oven for 45 minutes.
- Enjoy – I like to serve mine with steak, fish or chicken and some steamed broccoli.
