Melt the dark chocolate in a heatproof bowl over simmering water (or in short bursts in the microwave).
Pour the melted chocolate onto the baking paper and spread into an even layer.
Arrange the Medjool dates over the chocolate, gently pressing them down.
Drizzle the peanut butter evenly across the dates.
Scatter over the pomegranate seeds and pumpkin seeds.
Finish with a sprinkle of desiccated coconut.
Place in the fridge for 45 minutes, or until fully set.
Break into pieces and store in an airtight container.
