150gdark chocolate (I use 85% cocoa but 70% is fine)

55gdark chocolate chips (I use 70% cocoa)

65gpeanut butter
55gmaple syrup or honey
Instructions
Melt 90g of dark chocolate in the microwave (in a microwavable bowl). Stir every 30 seconds until fully melted.
Spread the melted dark chocolate into a silicone deep chocolate mould. Make sure it is in an even layer. (The chocolate mould I use is linked in the notes below). Place in the freezer for 10 minutes or until set.
In the meantime, grab a large bowl and mix together the almond flour, peanut butter, mixed seeds, dark chocolate chips and maple syrup.
Once the chocolate has set, spread the cookie dough mixture in an even layer on top of the chocolate.
Finally, in the same bowl that you previously melted the dark chocolate, melt the remaining 60g of dark chocolate. Once melted, pour over the top of the cookie dough, spreading evenly with a spoon.
Once the cookie dough is fully covered, place in the fridge for 10-15 minutes. Once set, break into 10 pieces and enjoy.
