Instructions
Pat dry the pork loin and score the skin in a criss cross fashion.
Place in the air fryer, add all the spice blend ingredients and extra virgin olive oil. Rub into the meat really well until fully coated.
Set the air fryer on the roast setting at temp 180. Cook for 40 minutes.
After 35 minutes, add a good drizzle of honey before cooking for the final 5 minutes.
After 40 minutes, allow to rest for 20 minutes before slicing. Make sure you save the leftover juices to spoon over the pork just before serving.
Serve with a nice side salad, crispy potatoes and steamed vegetables.
