Add the dark chocolate and coconut oil to a microwavable bowl. Melt in the microwave. (do this in 30 second intervals, stirring in between until fully melted) Once melted, line a tray with parchment paper and spread half the mixture in an even layer.
Next, remove the pit from each medjool date and place in an even layer on top of the chocolate. Press down firmly.
Drizzle a layer of peanut butter over dates.
Top the peanut butter with some mixed nuts and seeds.
Finally, pour over the remainder of the dark chocolate and spread evenly with a spoon. On this occasion, I topped with green matcha but feel free to top with whatever you fancy.
Place in the freezer to set for 20 minutes before cutting into even squares.
I store mine in the freezer, however, they will keep well in the fridge for up to a week... although they won't last long 😂
Notes
Potential changes/add ins:
Change the peanut butter for almond or cashew butter
Top with pine nuts, pistachios or cashews instead of the green matcha powder
Add a layer of jam on top of the peanut butter before adding the final layer of dark chocolate.
