Place the chicken breast onto a plate - season well on both sides with a generous pinch of salt, pepper and extra virgin olive oil.
Heat a pan on a medium heat - once hot, add the chicken breast to the pan. Cook for 6 minutes.
In the meantime, add all the marinade ingredients to a small bowl and stir well until combined.
After 6 minutes, flip the chicken and cook for a further 6 minutes.
Finally, pour over the marinade and allow to cook for a further 1-2 minutes or until nice and sticky. (Make sure the chicken breast is cooked all the way through with an internal temperature of at least 75℃)
Plate up and top with fresh coriander, pomegranate and pine nuts.
