Peanut, Soy and Honey Chicken

Ingredients
 

  • 1 large chicken breast
  • salt and pepper
  • 2 tsp extra virgin olive oil

Marinade Ingredients

  • 1 tsp peanut butter
  • 2 tsp soy sauce
  • 1 tbsp honey
  • ½ lime, juice only
  • 1/2 tsp chilli flakes
  • ½ tsp sesame seeds
  • 2 tbsp water

Garnishing

  • Fresh coriander
  • 1 tbsp Pomegranate
  • 1 tsp Pine nuts

Instructions
 

  • Place the chicken breast onto a plate - season well on both sides with a generous pinch of salt, pepper and extra virgin olive oil.
  • Heat a pan on a medium heat - once hot, add the chicken breast to the pan. Cook for 6 minutes.
  • In the meantime, add all the marinade ingredients to a small bowl and stir well until combined.
  • After 6 minutes, flip the chicken and cook for a further 6 minutes.
  • Finally, pour over the marinade and allow to cook for a further 1-2 minutes or until nice and sticky. (Make sure the chicken breast is cooked all the way through with an internal temperature of at least 75℃)
  • Plate up and top with fresh coriander, pomegranate and pine nuts.

Notes

This plate of food goes beautiful with a side of rice and mixed veggies.
