Slow Cooker Beef Noodles

Ingredients
 

  • 1 kg diced beef
  • 2 onions chopped
  • 2 carrots cut into matchsticks
  • 1 pepper cut into machsticks
  • 6-8 garlic cloves finely chopped
  • 1-2 chillies chopped
  • 2 cm piece of ginger chopped
  • 400 g mushrooms sliced in half
  • 250 ml beef or chicken stock
  • 120 ml soy sauce
  • 100 g honey
  • 1-2 tbsp sesame oil
  • 375 g noodles cooked

Optional garnishing

  • Spring onion
  • Fresh chilli
  • Fresh coriander
  • Sesame seeds

Instructions
 

  • Throw everything in the slow cooker except the noodles and give it a good stir.
  • Cook on high for 4 hours or low for 6-8 hours.
  • 10 minutes before serving, cook your noodles of choice according to instructions.
  • Once cooked, add the noodles to the slow cooker and stir through before serving.
  • Garnish with chopped spring onion, fresh chilli, coriander and sesame seeds.
