Heat a large skillet on a medium heat. Add 1 tbsp of extra virgin olive oil followed by the red onion, garlic, chilli and cumin seeds. Season with salt and sauté for around 3 minutes.
Next add the paprika along with a splash of water. Stir well for 30 seconds.
Throw in the butter beans and cherry tomatoes along with the Italian herbs and honey. Season well with salt and pepper.
Bring to the bubble before reducing the heat to a gentle simmer for 10 minutes or until the sauce thickens to your liking.
Place your sourdough in the toaster.
Add the juice of 1/2 a lemon and stir before serving on the toasted sourdough.
Top with herbs of choice and a drizzle of extra virgin olive oil.
