Baked eggs are so simple but absolutely delicious. There are so many combinations you can use when it comes to baked eggs - In this recipe, I added some finely chopped shallot, fresh chilli, crushed fresh garlic, smoked paprika and topped with some fresh coriander. This dish would also make a fantastic pre/post workout meal as it is packed full of protein, healthy fats, carbs, vitamins.
Grease an oven proof dish with a drizzle of oil and sprinkle with the smoked paprika until evenly distributed.
Crack the 3 eggs into the dish followed by the shallot, chilli, garlic and a pinch of salt and pepper.
Place in the oven for 8-10 minutes until the white is set but the yolks are still runny but just keep an eye out as everyone likes their eggs different!
Top with fresh coriander or herbs of choice.

I serve my baked eggs with griddled balsamic glazed tomatoes and smashed avocado on brown sourdough toast along with a double espresso.
