These salmon skewers are so simple to put together and are absolutely delicious. I like to serve mine with some crispy potatoes and a lovely side salad.
Place the soy sauce, maple syrup, Chinese five spice, minced garlic, green chilli and a pinch of pepper into a bowl. Whisk well.
Cut the salmon fillet into chunks and place in a large bowl. Pour the marinade over the salmon and carefully mix well. (ideally, allow to marinade for at least 30 minutes)
Carefully place the salmon chunks onto two skewers until evenly distributed before placing on a foil lined baking tray. Add the remainder of the marinade left in the bowl into a small pan and set aside.
Grill the salmon for 10-12 minutes turning every 3 minutes until the salmon is cooked to your liking.
Just before the salmon has finished cooking, place the leftover marinade on a medium heat to reduce the sauce slightly until it is nice and sticky.
Serve and top with fresh red chilli, spring onion and freshly grated lemon zest.
