Equipment

  • 1 Air fryer

Ingredients
 

  • 1 large sweet potato, sliced into 1-2cm toast like shapes
  • 1 tsp smoked paprika
  • 1/2 tsp garlic granules
  • 1 pinch of salt and pepper
  • 1 tbsp extra virgin olive oil

Topping options

Option 1

  • 4 large eggs, scrambled
  • 200 g cottage cheese
  • 1 large avocado

Option 2

  • Natural yogurt
  • Pomegranate
  • Blueberries
  • Pumpkin seeds
  • Honey

Instructions
 

  • Preheat the air fryer to temp 200.
  • Cut the sweet potato into 1-2cm thick toast like shapes. Place them in a large bowl before seasoning with salt, pepper, smoked paprika, garlic granules and a drizzle of extra virgin olive oil.
  • Place in the air fryer for 25 minutes.
  • Once cooked, enjoy with your favourite toppings. Personally, I love the combo of scrambled egg, avocado and cottage cheese.

Notes

Other topping ideas:
  • Fried eggs with grated cheddar cheese
  • Grilled halloumi and grilled nectarine
  • Peanut butter, blackberries and honey
  • Poached eggs, mushrooms and vined tomatoes.
