Ingredients
- 150 g dark chocolate (I use 85% cocoa but 70% is fine)
- 70 g almond flour
- 55 g dark chocolate chips (I use 70% cocoa)
- 20 g mixed seeds
- 65 g peanut butter
- 55 g maple syrup or honey
Instructions
- Melt 90g of dark chocolate in the microwave (in a microwavable bowl). Stir every 30 seconds until fully melted.
- Spread the melted dark chocolate into a silicone deep chocolate mould. Make sure it is in an even layer. (The chocolate mould I use is linked in the notes below). Place in the freezer for 10 minutes or until set.
- In the meantime, grab a large bowl and mix together the almond flour, peanut butter, mixed seeds, dark chocolate chips and maple syrup.
- Once the chocolate has set, spread the cookie dough mixture in an even layer on top of the chocolate.
- Finally, in the same bowl that you previously melted the dark chocolate, melt the remaining 60g of dark chocolate. Once melted, pour over the top of the cookie dough, spreading evenly with a spoon.
- Once the cookie dough is fully covered, place in the fridge for 10-15 minutes. Once set, break into 10 pieces and enjoy.
