Ingredients
- 1 mango, diced
- 1 avocado, diced
- 1 red onion, chopped
- 1 handful fresh coriander, finely chopped
- 1 lime, juice only
- 100 g pomegranate
- 1 tbsp pine nuts
- 1 tbsp extra virgin olive oil
- 1 pinch salt and pepper
Instructions
- Add the mango, avocado, red onion, fresh coriander, lime juice, pomegranate and pine nuts to a large bowl. Season with extra virgin olive oil, salt and pepper.
- Stir to combine and serve with protein source of choice.
Notes
This mango and avocado salad goes beautifully with most protein sources. I like to serve mine with either steak, chicken or fish.
