
Slow Roasted Leg Of Lamb – Chinese Style

Ingredients
- 2 kg leg of lamb
- 2 large red onions
- 1 lamb stock plus 350ml of water
- 1 pinch salt and pepper
Marinade
- 1 thumb sized piece of ginger chopped
- 1 Bulb of garlic peeled and chopped
- 1 tsp chilli flakes
- 3 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tbsp sesame oil
- 3 tbsp honey
Instructions
- Pre heat the oven to fan 150
- Place the lamb leg into a roasting tin along with the red onions
- Using a sharp knife, make incisions all over the lamb,
- In a small bowl, mix all the marinade ingredients together before pouring over the lamb. Using your hands, rub the marinade into the meat really well.
- Add the stock and 350ml of water to the tray before seasoning the lamb with a good pinch of salt and pepper.
- Cover with tin foil and slow roast in the oven for 6 hours making sure to baste half way through the cooking process.
- Remove from the oven and allow to rest for 30 minutes before pulling the lamb off the bone.
- Enjoy this melt in the mouth chinese inspired lamb
Notes
Serving suggestions for a balanced meal:
- Roast potatoes, crispy kale, tomatoes and asparagus
- Sweet potato mash, broccoli, roasted carrots and parsnips
- Chinese style rice along with a mango, avocado and pomegranate salad
