Spicy Butter Beans

Ingredients
- 1 red onion finely chopped
- 4 garlic cloves finely chopped
- 1 large chilli finely chopped
- 1 tbsp extra virgin olive oil
- 1 tsp cumin seeds
- 2 tsp paprika
- splash of water
- 1 can butter beans drained
- 1 can cherry tomatoes
- 1 tsp Italian herbs
- 2 tsp honey
- Salt and pepper
- The juice of half a lemon
Instructions
- Heat a large skillet on a medium heat. Add 1 tbsp of extra virgin olive oil followed by the red onion, garlic, chilli and cumin seeds. Season with salt and sauté for around 3 minutes.
- Next add the paprika along with a splash of water. Stir well for 30 seconds.
- Throw in the butter beans and cherry tomatoes along with the Italian herbs and honey. Season well with salt and pepper.
- Bring to the bubble before reducing the heat to a gentle simmer for 10 minutes or until the sauce thickens to your liking.
- Place your sourdough in the toaster.
- Add the juice of 1/2 a lemon and stir before serving on the toasted sourdough.
- Top with herbs of choice and a drizzle of extra virgin olive oil.
