Ingredients
- 1 kg chicken thighs
- 2 tsp smoked paprika
- 2 tsp garlic granules
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp chilli flakes
- 1 tsp salt and pepper
- 1-2 tbsp extra virgin olive oil
- 2 red onions, sliced
- 1 yellow pepper, chopped
- 6 garlic cloves, chopped
- 1 red chilli, chopped
- 200 grams mushrooms, sliced
- 1-2 tsp Italian herbs
- 1 tbsp honey
Instructions
- Add the chicken to a large bowl along with the smoked paprika, garlic granules, ground coriander, ground cumin, chilli flakes, salt, pepper, and 1 tbsp of extra virgin olive oil. Mix well with your hands until the chicken is fully coated in the spice mixture. Set aside.
- Heat a skillet over a medium heat. Add the chicken and cook for 4-5 minutes on each side until nicely charred. It doesn't need to be fully cooked through as it will be going back in the pan. After around 10 minutes, remove from the pan and set aside.
- In the same pan, add another drizzle of oil followed by the sliced red onions, yellow pepper, mushrooms, garlic and chilli. Season with a pinch of salt and saute for 5-7 minutes until softened.
- Grab yourself a pair of scissors and cut the chicken into bite sized pieces. Add back into the pan along with the juices, 1 tbsp of honey and Italian herbs. Stir well and allow to cook on a medium-low heat for 10-15 minutes while you prepare everything else.
- During this time, I like to make homemade guacamole, yogurt dip, grate some cheese and warm the wraps. Alternatively, you can buy store bought, however, homemade is always much tastier and healthier.
Notes
Other serving suggestions:
Serve on top of a sweet jacket potato along with yogurt dip, smashed avocado and cheese.
Enjoy with some whole grain rice, quinoa or pasta.
Serve on top of a delicious salad with a side of crispy roasted potatoes.
Enjoy on its own and top with some fried eggs.
