Chocolate covered peanut butter dates

Ingredients
 

  • 11 medjool dates pitted
  • 35 grams peanut butter smooth
  • 80 grams dark chocolate melted
  • 20 grams peanuts chopped

Instructions
 

  • Line a plate with some parchment paper. Next, slice a slit lengthways down the centre of each date and remove the pit (Be careful not to slice all the way through as you want to stuff them with the peanut butter)
  • Stuff each one with a decent amount of peanut butter before placing on the parchment lined plate. Place in the freezer for around 1 hour.
  • Remove the stuffed dates out of the freezer. Break the dark chocolate up into a microwavable bowl and place in the microwave for 40 seconds. After 40 seconds, remove, give it a stir and repeat this process until fully melted.
  • Cover each date one at a time with the melted dark chocolate and place on the parchment lined plate before topping with the chopped peanuts (you will need to do this quickly and one at a time before the chocolate hardens)
  • Place in the fridge for 10 minutes until fully set.
  • Store in the fridge for up to 1 week
