Chocolate, Date, Jam And Peanut Butter Squares

Ingredients
 

  • 150 g dark chocolate melted (85% cocoa)
  • 1 tsp coconut oil
  • 6 tbsp peanut butter
  • 6 tbsp chia jam (recipe below in the notes)
  • 1 rice cake crushed
  • 20 medjool dates pitted
  • 2 tbsp mixed seeds
  • 2 tbsp dried cranberries

Instructions
 

  • Melt the dark chocolate along with 1 tsp of coconut oil in the microwave. Do this in 30 second intervals stirring in between until fully melted.
  • Line a tin with parchment paper and pour half of the melted chocolate onto the paper. Spread evenly using the back of a spoon.
  • Top with 2-3 tbsp of peanut butter, 2-3 tbsp of chia jam and the crushed rice cake. Making sure it is in an evenish layer. (it doesn't have to be perfect).
  • Next, Press down the pitted medjool dates into the dark chocolate until it is fully covered with dates.
  • Top with another layer of peanut butter, chia jam and the remainder of the melted dark chocolate. Once it is fully covered with chocolate, sprinkle on the mixed seeds and dried cranberries.
  • Place in the freezer for 30 minutes until set. Finally, slice into squares and store in the freezer. These will keep well for a few months… however, they won't last long 😃

Notes

 

You can use store bought jam for this recipe if you wish, however, making homemade chia jam is so simple and highly nutritious. The recipe is below:

 

Ingredients:

  • 400g mixed berries
  • 2 tbsp chia seeds
  • 2 tbsp honey
  • 1/2 lemon (juice only)
Method:
  1. Add the frozen berries to a pan on a medium heat. Cook until soft enough to mash with a fork and the juices have released. This will take around 5 minutes.
  2. Remove from the heat and add the chia seeds, lemon juice and honey. Stir well and allow to cool.
