Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 large red onion chopped
  • 6 garlic cloves chopped
  • 1 thumb sized piece of ginger chopped
  • 2 smoked red peppers chopped
  • 2 tsp smoked paprika
  • 1 tsp turmeric
  • 2 tsp ground coriander
  • 1 tsp chilli flakes
  • 1 splash of water
  • 1 tin of butter beans drained
  • 1 stock pot I use homemade but store bought is fine
  • 2 tsp honey
  • 300-400 ml water
  • 1 good pinch of salt and pepper
  • 300 g shredded cooked chicken breast
  • 1 lemon juice only

Optional Toppings

  • pistachios
  • pine nuts
  • chilli flakes
  • extra virgin olive oil

Instructions

  • Heat the extra virgin olive oil in a large pan over a medium heat.
  • Add the chopped red onion, garlic, ginger, smoked red peppers and cook for 3-4 minutes, stirring now and then, until softened and starting to turn translucent.
  • Add the the smoked paprika, turmeric, ground coriander and chilli flakes. Stir well so everything is coated in the oil and spices.
  • Add a splash of water to loosen the pan and stop the spices from sticking. Cook for 1-2 minutes, scraping up anything from the base of the pan.
  • Drain and rinse the butter beans, then add them to the pan along with the stock pot and honey. Stir to combine.
  • Pour in 300 to 400ml of water, depending on how thick you like your soup. Add a good pinch of salt and pepper.
  • Bring to the bubble, then reduce the heat and simmer gently for 10 minutes, so the flavours develop and the beans soften.
  • Stir through the shredded cooked chicken and warm it through for 2 to 3 minutes.
  • Take the pan off the heat and squeeze in the lemon juice. Taste and adjust the seasoning, adding more salt, pepper or lemon if it needs it.
  • Ladle into bowls and top any additional garnishing – on this occasion I went for pistachios, pine nuts, a pinch of chilli flakes and a drizzle of extra virgin olive oil.
