Crispy kale with a kick
Kale is packed full of nutrients, provides the body with powerful antioxidants and is high in Vitamin K and C. This crispy kale with a kick makes a wonderful side dish.

Ingredients
- 200 grams kale (washed)
- 7 garlic cloves (crushed)
- 1 fresh red chilli (finely chopped)
- 1 tsp smoked paprika
- 1 good pinch of salt
- 1 good pinch of pepper
- 2 tbsp olive oil
Optional garnishing
- 1 handful of crushed walnuts
- 1 handful of fresh pomegranate
Instructions
- Pre heat the oven to fan 180
- Wash and dry the kale really well before adding to a parchment lined baking tray.
- Add the crushed garlic and chilli along with the smoked paprika, salt, pepper and extra virgin olive oil. Mix well.
- Place in the oven for 5 minutes. After 5 minutes, stir well and place back in the oven for a further 5 minutes. After a total of 10 minutes, give it another good stir before placing back in the oven for a final 3 minutes. keep an eye out as you don't want it to burn.
- Remove from the oven and place in a bowl. Top with crushed walnuts and fresh pomegranate.
