Ingredients
 

  • 1.5 kg pork loin
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 splash of water

Spice Blend

  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp chilli flakes
  • 1 tsp sumac
  • 2 tsp smoked paprika
  • 2 tsp ground coriander
  • 1 tsp Italian herbs

Instructions
 

  • Pat dry the pork loin and score the skin in a criss cross fashion.
  • Place in the air fryer, add all the spice blend ingredients and extra virgin olive oil. Rub into the meat really well until fully coated.
  • Set the air fryer on the roast setting at temp 180. Cook for 40 minutes.
  • After 35 minutes, add a good drizzle of honey before cooking for the final 5 minutes.
  • After 40 minutes, allow to rest for 20 minutes before slicing. Make sure you save the leftover juices to spoon over the pork just before serving.
  • Serve with a nice side salad, crispy potatoes and steamed vegetables.
