Ingredients
- 1.5 kg pork loin
- 1 tbsp olive oil
- 1 tbsp honey
- 1 splash of water
Spice Blend
- 1 tsp salt
- 1 tsp pepper
- 1 tsp chilli flakes
- 1 tsp sumac
- 2 tsp smoked paprika
- 2 tsp ground coriander
- 1 tsp Italian herbs
Instructions
- Pat dry the pork loin and score the skin in a criss cross fashion.
- Place in the air fryer, add all the spice blend ingredients and extra virgin olive oil. Rub into the meat really well until fully coated.
- Set the air fryer on the roast setting at temp 180. Cook for 40 minutes.
- After 35 minutes, add a good drizzle of honey before cooking for the final 5 minutes.
- After 40 minutes, allow to rest for 20 minutes before slicing. Make sure you save the leftover juices to spoon over the pork just before serving.
- Serve with a nice side salad, crispy potatoes and steamed vegetables.
