Ingredients
 

  • 1 mango, diced
  • 1 avocado, diced
  • 1 red onion, chopped
  • 1 handful fresh coriander, finely chopped
  • 1 lime, juice only
  • 100 g pomegranate
  • 1 tbsp pine nuts
  • 1 tbsp extra virgin olive oil
  • 1 pinch salt and pepper

Instructions
 

  • Add the mango, avocado, red onion, fresh coriander, lime juice, pomegranate and pine nuts to a large bowl. Season with extra virgin olive oil, salt and pepper.
  • Stir to combine and serve with protein source of choice.

Notes

This mango and avocado salad goes beautifully with most protein sources. I like to serve mine with either steak, chicken or fish.
