Mixed berry chia jam
Who loves jam!? This delicious mixed berry chia jam is refined sugar free and packed full of vitamin c, antioxidants, fibre and prebiotics to help promote a healthy gut.

Ingredients
- 250 grams frozen mixed berries
- 2 tbsp chia seeds
- 2 tbsp maple syrup or honey
- 1 lemon juice only
Instructions
- Add the mixed berries to a medium sized pan on a medium heat. Allow to soften for around 3-4 minutes, stirring occasionally until the fruit begins to soften and break down.
- At this point, mash with a wooden spoon or masher.
- Remove from the heat and add the chia seeds, maple syrup and fresh lemon juice. Stir well and allow to cool for 5 minutes. The mixed berry chia jam will thicken as it cools.
- Store in a jam jar or airtight container for up to 2 weeks in the fridge.
