Ingredients
- 1 large chicken breast
- salt and pepper
- 2 tsp extra virgin olive oil
Marinade Ingredients
- 1 tsp peanut butter
- 2 tsp soy sauce
- 1 tbsp honey
- ½ lime, juice only
- 1/2 tsp chilli flakes
- ½ tsp sesame seeds
- 2 tbsp water
Garnishing
- Fresh coriander
- 1 tbsp Pomegranate
- 1 tsp Pine nuts
Instructions
- Place the chicken breast onto a plate – season well on both sides with a generous pinch of salt, pepper and extra virgin olive oil.
- Heat a pan on a medium heat – once hot, add the chicken breast to the pan. Cook for 6 minutes.
- In the meantime, add all the marinade ingredients to a small bowl and stir well until combined.
- After 6 minutes, flip the chicken and cook for a further 6 minutes.
- Finally, pour over the marinade and allow to cook for a further 1-2 minutes or until nice and sticky. (Make sure the chicken breast is cooked all the way through with an internal temperature of at least 75℃)
- Plate up and top with fresh coriander, pomegranate and pine nuts.
Notes
This plate of food goes beautiful with a side of rice and mixed veggies.
