Ingredients
 

  • 1 red onion finely chopped
  • 4 garlic cloves finely chopped
  • 1 large chilli finely chopped
  • 1 tbsp extra virgin olive oil
  • 1 tsp cumin seeds
  • 2 tsp paprika
  • splash of water
  • 1 can butter beans drained
  • 1 can cherry tomatoes
  • 1 tsp Italian herbs
  • 2 tsp honey
  • Salt and pepper
  • The juice of half a lemon

Instructions
 

  • Heat a large skillet on a medium heat. Add 1 tbsp of extra virgin olive oil followed by the red onion, garlic, chilli and cumin seeds. Season with salt and sauté for around 3 minutes.
  • Next add the paprika along with a splash of water. Stir well for 30 seconds.
  • Throw in the butter beans and cherry tomatoes along with the Italian herbs and honey. Season well with salt and pepper.
  • Bring to the bubble before reducing the heat to a gentle simmer for 10 minutes or until the sauce thickens to your liking.
  • Place your sourdough in the toaster.
  • Add the juice of 1/2 a lemon and stir before serving on the toasted sourdough.
  • Top with herbs of choice and a drizzle of extra virgin olive oil.

Notes

I would also recommend serving these spicy butter beans with:
  • Jacket potato and a side salad
  • Wholegrain rice 
  • Quinoa 
  • Avocado 
  • Topped with 3 poached or fried eggs
