Spicy Jumbo Prawns Scallops and Crispy Gnocchi

Ingredients
 

  • 200 g Raw jumbo prawns
  • 200 g Scallops
  • 300 g Gnocchi store bought or homemade
  • 1 Thumb sized piece of ginger finely chopped
  • 3 Garlic cloves finely chopped
  • 1 Spring onion finely chopped
  • 1 Red chilli finely choppped
  • 2 tbsps Avocado/rapeseed oil
  • 1 Knob of butter
  • Salt and pepper to taste
  • ½ Lime juice only

Marinade

  • 2 tbsps Soy sauce
  • 2 tbsps Honey
  • 2 tsps Paprika
  • ½ Lime juice only
  • 1 Pinch of pepper

Optional garnishing

  • Fresh herbs of choice
  • Spring onion
  • Red chilli

Instructions
 

  • Place all the marinade ingredients into a bowl and give it a good whisk – Set aside.
  • Heat a large non stick pan on a medium heat before adding 1 tbsp of oil followed by the gnocchi. Pan fry for 5 minutes, turning occasionally. Once cooked, set aside. 3) Add the king prawns to some boiling water. Cook for 90 seconds before rinsing quickly with cold water to stop them from overcooking. Place on a plate and set aside.
  • Pat dry the scallops with some kitchen roll and season with salt and pepper. Heat a large cast iron pan on a medium-high heat. Once hot, add 1 tbsp of oil followed by the scallops (make sure there is plenty of room between them so they get some nice colour) Cook for 2 minutes before turning. Once the scallops have been turned over, add a knob of butter and continue to cook them for another 2 minutes. After 4 minutes of cooking, remove and set aside.
  • In the same pan as the scallops were cooked, add the garlic, chilli, spring onion and ginger along with 1 tbsp of oil. Sauté for 45 seconds before adding a splash of water to deglaze the pan followed by the marinade. Reduce slightly for 30 seconds and then add the gnocchi and jumbo prawns to the pan. Stir well before turning off the heat. Add the juice of half a lime before serving.
  • Plate up and place the scallops on top of the dish.
  • Top with fresh herbs of choice, red chilli and spring onion.
