Spicy Oven Baked Eggs

Baked eggs are so simple but absolutely delicious. There are so many combinations you can use when it comes to baked eggs – In this recipe, I added some finely chopped shallot, fresh chilli, crushed fresh garlic, smoked paprika and topped with some fresh coriander. This dish would also make a fantastic pre/post workout meal as it is packed full of protein, healthy fats, carbs, vitamins.

Ingredients
 

  • 3 Large Eggs
  • 1/2 Small Shallot (finely chopped)
  • 1 Garlic clove (finely chopped)
  • 1/2 tsp Smoked paprika
  • 1 Pinch Salt
  • Extra virgin olive oil (or oil of choice)
  • Garnish with fresh coriander or parsley (optional)

Instructions
 

Pre heat the oven to fan 220°C

  • Grease an oven proof dish with a drizzle of oil and sprinkle with the smoked paprika until evenly distributed.
  • Crack the 3 eggs into the dish followed by the shallot, chilli, garlic and a pinch of salt and pepper.
  • Place in the oven for 8-10 minutes until the white is set but the yolks are still runny but just keep an eye out as everyone likes their eggs different!
  • Top with fresh coriander or herbs of choice.

Notes

I serve my baked eggs with griddled balsamic glazed tomatoes and smashed avocado
on brown sourdough toast along with a double espresso.
