Spicy Red Pepper Dip

Ingredients
 

  • 2 red peppers, sliced
  • 1 red onion, chopped
  • 1 garlic bulb, head sliced and left whole
  • 1 red chilli
  • salt and pepper
  • 1 tsp paprika
  • 2 tbsp extra virgin olive oil
  • 2 tsp honey
  • ½ lemon, juice only

Instructions
 

  • Pre heat the oven to fan 180
  • Add the peppers, red onion, garlic and chilli to a roasting dish. Season with salt, pepper, a drizzle of oil and paprika. Mix well.
  • Place in the oven for 40 minutes.
  • After 40 minutes, allow to cool before placing in a blender with honey, extra virgin olive oil, lemon, salt and pepper.
  • Blitz until smooth and enjoy.

Notes

You can store this in an airtight container for 3-4 days… but trust me, it wont last long.
