Spicy Red Pepper Dip

Ingredients
- 2 red peppers, sliced
- 1 red onion, chopped
- 1 garlic bulb, head sliced and left whole
- 1 red chilli
- salt and pepper
- 1 tsp paprika
- 2 tbsp extra virgin olive oil
- 2 tsp honey
- ½ lemon, juice only
Instructions
- Pre heat the oven to fan 180
- Add the peppers, red onion, garlic and chilli to a roasting dish. Season with salt, pepper, a drizzle of oil and paprika. Mix well.
- Place in the oven for 40 minutes.
- After 40 minutes, allow to cool before placing in a blender with honey, extra virgin olive oil, lemon, salt and pepper.
- Blitz until smooth and enjoy.
Notes
You can store this in an airtight container for 3-4 days… but trust me, it wont last long.
