Ingredients
 

  • 900 g chicken thighs

Marinade Ingredients

  • 2 tsp garlic granules
  • 2 tsp onion granules
  • 2 tsp smoked paprika
  • 2 tsp mixed herbs
  • 2 tsp ground coriander
  • 1 tsp chilli flakes
  • 1 good pinch of salt and pepper
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar

Sauce Ingredients

  • 2 tbsp tomato puree
  • 4 garlic cloves, crushed
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 2 tsp ginger, grated or juiced
  • ½ lime
  • ½ tsp mixed spice
  • 1 tsp cayenne pepper (optional but will add a good kick)

Instructions
 

  • Add the chicken thighs to a large bowl followed by all the marinade ingredients. Mix well using clean hands and set aside.
  • Next add all the sauce ingredients to a mason jar and shake well to combine.
  • Heat a large skillet over a medium heat before adding the chicken thighs. Cook for 12 minutes making sure to turn every 2-3 minutes.
  • After 12 minutes, pour the sauce over the chicken thighs and continue cooking for 3 minutes or until the sauce is nice and sticky. Turn the chicken every 45 seconds for even coating.
  • Serve with rice and veggies of choice.
