Ingredients
- 900 g chicken thighs
Marinade Ingredients
- 2 tsp garlic granules
- 2 tsp onion granules
- 2 tsp smoked paprika
- 2 tsp mixed herbs
- 2 tsp ground coriander
- 1 tsp chilli flakes
- 1 good pinch of salt and pepper
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp apple cider vinegar
Sauce Ingredients
- 2 tbsp tomato puree
- 4 garlic cloves, crushed
- 1 tbsp honey
- 2 tbsp soy sauce
- 2 tsp ginger, grated or juiced
- ½ lime
- ½ tsp mixed spice
- 1 tsp cayenne pepper (optional but will add a good kick)
Instructions
- Add the chicken thighs to a large bowl followed by all the marinade ingredients. Mix well using clean hands and set aside.
- Next add all the sauce ingredients to a mason jar and shake well to combine.
- Heat a large skillet over a medium heat before adding the chicken thighs. Cook for 12 minutes making sure to turn every 2-3 minutes.
- After 12 minutes, pour the sauce over the chicken thighs and continue cooking for 3 minutes or until the sauce is nice and sticky. Turn the chicken every 45 seconds for even coating.
- Serve with rice and veggies of choice.
