Ingredients
- 1 large sweet potato, sliced into 1-2cm toast like shapes
- 1 tsp smoked paprika
- 1/2 tsp garlic granules
- 1 pinch of salt and pepper
- 1 tbsp extra virgin olive oil
Topping options
Option 1
- 4 large eggs, scrambled
- 200 g cottage cheese
- 1 large avocado
Option 2
- Natural yogurt
- Pomegranate
- Blueberries
- Pumpkin seeds
- Honey
Instructions
- Preheat the air fryer to temp 200.
- Cut the sweet potato into 1-2cm thick toast like shapes. Place them in a large bowl before seasoning with salt, pepper, smoked paprika, garlic granules and a drizzle of extra virgin olive oil.
- Place in the air fryer for 25 minutes.
- Once cooked, enjoy with your favourite toppings. Personally, I love the combo of scrambled egg, avocado and cottage cheese.

Other topping ideas:
- Fried eggs with grated cheddar cheese
- Grilled halloumi and grilled nectarine
- Peanut butter, blackberries and honey
- Poached eggs, mushrooms and vined tomatoes.
