Instructions
In a food processor, combine the dates, almond flour, protein powder and seeds.
Blend until the mixture comes together. If it’s too dry or crumbly, add water gradually (1 tsp at a time) until it sticks when pressed.
Scoop about 1 tablespoon of the mixture and roll into balls. You will be able to make 5 large balls.
Place the balls in the freezer for 30 minutes to firm up. This makes coating easier.
In a microwave-safe bowl, melt the dark chocolate in 30 second intervals stirring in between until smooth.
Dip each chilled ball into the melted chocolate, then place on a parchment-lined tray.
Immediately sprinkle with chopped nuts or seeds before the chocolate sets.
Let the chocolate harden in the fridge for ten minutes before enjoying.
Store in an airtight container in the fridge for up to a week.
