Instructions
Throw the oats, dates, maple syrup, pecans, peanut butter and salt into a food processor and blitz for 1 minute until it reaches a dough like texture.
Melt the dark chocolate in a microwavable bowl in the microwave for 60 seconds until melted (stir after 30 seconds and place back in for the final 30 seconds) Set aside and allow to cool for a few minutes.
In the meantime, roll the dough mixture into balls/3 cookie like shapes.
Once the chocolate has cooled slightly, coat the balls/cookie shapes in the chocolate mixture - place on a plate covered in parchment paper.
