Healthy Dark Chocolate covered Snacks
These taste naughty but are so healthy and absolutely delicious. They are also refined sugar free, dairy free and gluten free.

Ingredients
- 90 g Oats
- 5 Medjool dates pitted
- 2 tbsps Maple syrup
- 2 tbsps Smooth peanut butter
- Handful of pecans
- pinch Salt
- 70 g Dark chocolate I used a raspberry flavoured one on this occasion
Toppings
- Crushed nuts of choice I used a mixture of peanuts, walnuts, sunflower seeds and pumpkin seeds
- Goji berries
Instructions
- Throw the oats, dates, maple syrup, pecans, peanut butter and salt into a food processor and blitz for 1 minute until it reaches a dough like texture.
- Melt the dark chocolate in a microwavable bowl in the microwave for 60 seconds until melted (stir after 30 seconds and place back in for the final 30 seconds) Set aside and allow to cool for a few minutes.
- In the meantime, roll the dough mixture into balls/3 cookie like shapes.
- Once the chocolate has cooled slightly, coat the balls/cookie shapes in the chocolate mixture – place on a plate covered in parchment paper.
- Top with crushed nuts and goji berries.
- Place in the fridge until set.
