Ingredients
 

  • 1.5kg pork ribs
  • 1 bulb garlic, peeled and finely chopped
  • 1 2cm piece of ginger, peeled and finely chopped
  • 1 green chilli, finely chopped
  • 1 large red onion, peeled and finely chopped
  • 2 smoked peppers, finely chopped

Korean sauce

  • 1 tsp gochujang paste
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 lime, juice only
  • 1 pinch salt and pepper

Optional garnishing

  • Fresh coriander

Instructions
 

  • Add the pork ribs, garlic, ginger, green chilli, red onion and smoked peppers to the slow cooker.
  • In a small bowl, add 1 tsp of gochujang paste, 3 tbsp honey, 2 tbsp soy sauce, 2 tsp sesame oil and the juice of a lime. Mix well before pouring into the slow cooker. Season with a pinch of salt and pepper.
  • Place the lid on and cook for 8 hours on low or 4-5 hours on high.
  • I like to serve mine on a bed of mash with mixed vegetables. This was a joy and the ribs fell off the bone.
