Ingredients
- 1.5kg pork ribs
- 1 bulb garlic, peeled and finely chopped
- 1 2cm piece of ginger, peeled and finely chopped
- 1 green chilli, finely chopped
- 1 large red onion, peeled and finely chopped
- 2 smoked peppers, finely chopped
Korean sauce
- 1 tsp gochujang paste
- 3 tbsp honey
- 2 tbsp soy sauce
- 2 tsp sesame oil
- 1 lime, juice only
- 1 pinch salt and pepper
Optional garnishing
- Fresh coriander
Instructions
- Add the pork ribs, garlic, ginger, green chilli, red onion and smoked peppers to the slow cooker.
- In a small bowl, add 1 tsp of gochujang paste, 3 tbsp honey, 2 tbsp soy sauce, 2 tsp sesame oil and the juice of a lime. Mix well before pouring into the slow cooker. Season with a pinch of salt and pepper.
- Place the lid on and cook for 8 hours on low or 4-5 hours on high.
- I like to serve mine on a bed of mash with mixed vegetables. This was a joy and the ribs fell off the bone.
