Fresh, delicious and highly nutritious. This Mediterranean chickpea salad is a wonderful side dish and the chickpeas are a great addition if you are looking to include more protein into your daily intake.
1cucumberpeeled, halved, seeds removed and thinly sliced
10basil leaves
3garlic clovescrushed
2tbspextra virgin olive oil
1pinchsalt
1pinchblack pepper
1tspdried basil
1tspdried oregano
Instructions
Add the drained chickpeas, sliced red onion, 3 quartered tomatoes, cherry tomatoes, black olives, cucumber, basil leaves and garlic cloves to a large bowl.
Season with salt, pepper, dried oregano, dried basil, extra virgin olive oil and stir until well combined.
