Fresh, delicious and highly nutritious. This Mediterranean chickpea salad is a wonderful side dish and the chickpeas are a great addition if you are looking to include more protein into your daily intake.

Ingredients
 

  • 1 tin organic chickpeas drained
  • 1 red onion thinly sliced
  • 3 medium tomatoes quartered
  • 10 cherry tomatoes halved
  • 20 black olives halved
  • 1 cucumber peeled, halved, seeds removed and thinly sliced
  • 10 basil leaves
  • 3 garlic cloves crushed
  • 2 tbsp extra virgin olive oil
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tsp dried basil
  • 1 tsp dried oregano

Instructions
 

  • Add the drained chickpeas, sliced red onion, 3 quartered tomatoes, cherry tomatoes, black olives, cucumber, basil leaves and garlic cloves to a large bowl.
  • Season with salt, pepper, dried oregano, dried basil, extra virgin olive oil and stir until well combined.
  • Enjoy

Notes

This salad goes well with almost everything and is full of colour, flavour and highly nutritious.
I like to serve this Mediterranean salad with whole roasted chicken and crispy potatoes.
Also goes great with:
Fish and whole grain rice
Steak and sweet potato wedges
Duck breast and quinoa
