Ingredients
- 1 tin organic chickpeas drained
- 1 red onion thinly sliced
- 3 medium tomatoes quartered
- 10 cherry tomatoes halved
- 20 black olives halved
- 1 cucumber peeled, halved, seeds removed and thinly sliced
- 10 basil leaves
- 3 garlic cloves crushed
- 2 tbsp extra virgin olive oil
- 1 pinch salt
- 1 pinch black pepper
- 1 tsp dried basil
- 1 tsp dried oregano
Instructions
- Add the drained chickpeas, sliced red onion, 3 quartered tomatoes, cherry tomatoes, black olives, cucumber, basil leaves and garlic cloves to a large bowl.
- Season with salt, pepper, dried oregano, dried basil, extra virgin olive oil and stir until well combined.
- Enjoy
Notes
This salad goes well with almost everything and is full of colour, flavour and highly nutritious.
I like to serve this Mediterranean salad with whole roasted chicken and crispy potatoes.
