For the fried eggs
4eggs
2tspextra virgin olive oil
1pinch salt and pepper
Instructions
For the potato nachos
Thinly slice the potato into nacho like shapes before adding to a large bowl. Season with salt, garlic granules, smoked paprika, onion granules and extra virgin olive oil. Mix well using your hands.
Add the potato nachos to a preheated air fryer at temp 190. Cook for 20 minutes turning regularly.
For the fried eggs
Heat a large pan on a medium heat. Add a drizzle of extra virgin olive oil to the pan. Crack in 4 eggs and season with salt and pepper. Allow to cook for around 2 minutes or until cooked to your liking.
To serve
Serve the potato nachos with the eggs. I like to top mine with grated cheese, fresh pomegranate, pine nuts, fresh coriander and fresh red chilli. This is optional and feel free to use your toppings of choice.
