Ingredients
 

For the potato nachos

  • 1 medium white potato, sliced into thin nacho like shapes
  • 1 pinch salt
  • 1 tsp garlic
  • 1 tsp smoked paprika
  • 1 tsp onion granules
  • 1 tsp extra virgin olive oil

For the fried eggs

  • 4 eggs
  • 2 tsp extra virgin olive oil
  • 1 pinch salt and pepper

Instructions
 

For the potato nachos

  • Thinly slice the potato into nacho like shapes before adding to a large bowl. Season with salt, garlic granules, smoked paprika, onion granules and extra virgin olive oil. Mix well using your hands.
  • Add the potato nachos to a preheated air fryer at temp 190. Cook for 20 minutes turning regularly.

For the fried eggs

  • Heat a large pan on a medium heat. Add a drizzle of extra virgin olive oil to the pan. Crack in 4 eggs and season with salt and pepper. Allow to cook for around 2 minutes or until cooked to your liking.

To serve

  • Serve the potato nachos with the eggs. I like to top mine with grated cheese, fresh pomegranate, pine nuts, fresh coriander and fresh red chilli. This is optional and feel free to use your toppings of choice.

Adjust the portion as required depending on your goals and the amount of food you usually eat.
