Season the chicken thighs with a little oil, salt and pepper.
Heat a griddle pan on a medium heat (I used two pans to ensure even cooking)
Once hot, add the chicken thighs skin side down and allow to cook for 6 minutes.
After 6 minutes, flip and cook the flesh side for 6 minutes.
After a total of 12 minutes, pour in the marinade and continue to cook for 2-3 minutes until the marinade is nice and sticky and the chicken is cooked through.
