Chocolate, Date and Coconut Protein Balls

A delicious healthy protein snack for pre/post workout. You can also enjoy these with a nice cup of tea/coffee. These are perfect to pop in some tupperware and take out and about with you.

Ingredients
 

  • 70 g Chocolate protein powder
  • 12 Medjool dates
  • 80 g Nut butter of choice I used peanut
  • 90 g Oats
  • 2 tbsps Almond milk or milk of choice

To finish

  • Desiccated coconut

Instructions
 

  • Add the protein powder, dates, oats, peanut butter and 1 tbsp of almond milk to a food processor – Blitz for 2 minutes.
  • Add 1 tbsp of almond milk blitz for a further minute until the mixture turns into a thick dough
  • Add the desiccated coconut to a bowl. Roll the mixture into 7 big balls – coat each one of them with desiccated coconut by rolling them in the bowl one at a time.
  • Place the finished protein balls on a plate and store in the fridge for up to 1 week.
