Healthy Chocolate and Walnut Banana Bread

You won’t find many banana bread recipes as healthy and delicious as this. It is a wonderful breakfast, dessert, pre or post workout snack that will keep you fuelled and fuller for longer.

Ingredients
 

  • 180 g Oats
  • 2 Large eggs
  • 3 medium Ripe bananas
  • 1 tsp Vanilla extract
  • 1 tbsps Natural yogurt or dairy free yogurt
  • 2 tbsp Walnuts
  • 85 g Maple syrup/honey
  • ½ tsp Salt
  • 1 tsp Baking powder
  • 60 g Dark chocolate

Instructions
 

  • Pre heat oven to fan 160℃
  • Place all the ingredients apart from the dark chocolate into a blender. Blend for 1 minute.
  • Chop up 35 g of the dark chocolate into really small pieces and stir into the banana bread mixture.
  • Line a 8×4 bread tin with some parchment paper and pour the mixture into it.
  • Chop the other 25 g of dark chocolate and sprinkle evenly on top of the mixture before placing in the oven for 45 minutes.
  • Allow to cool and enjoy with a nice cup of coffee.
