Ingredients
- 200 g rolled oats, blended into flour
- 3 ripe bananas
- 2 large eggs
- 90 g maple syrup or honey
- 60 g natural yogurt
- 55 g extra virgin olive oil
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 75 g pistachios, chopped
- 25 g pistachios, chopped for topping
Instructions
- Preheat oven at fan 160 and line a 9×5-inch loaf pan with parchment paper.
- Make oat flour: Blend oats in a blender or food processor until fine.
- Mash the bananas in a large bowl. Whisk in the eggs, syrup, yogurt, and oil until smooth.
- Add the oat flour, baking soda, baking powder, cinnamon, and salt. Stir until combined.
- Fold in chopped pistachios.
- Pour into prepared loaf pan. Sprinkle more pistachios on top.
- Bake for 45–55 minutes, or until a toothpick comes out clean.
- Allow to cool for 10-15 minutes before slicing.
