Pistachio Banana Bread

Ingredients
 

  • 200 g rolled oats, blended into flour
  • 3 ripe bananas
  • 2 large eggs
  • 90 g maple syrup or honey
  • 60 g natural yogurt
  • 55 g extra virgin olive oil
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 75 g pistachios, chopped
  • 25 g pistachios, chopped for topping

Instructions
 

  • Preheat oven at fan 160 and line a 9×5-inch loaf pan with parchment paper.
  • Make oat flour: Blend oats in a blender or food processor until fine.
  • Mash the bananas in a large bowl. Whisk in the eggs, syrup, yogurt, and oil until smooth.
  • Add the oat flour, baking soda, baking powder, cinnamon, and salt. Stir until combined.
  • Fold in chopped pistachios.
  • Pour into prepared loaf pan. Sprinkle more pistachios on top.
  • Bake for 45–55 minutes, or until a toothpick comes out clean.
  • Allow to cool for 10-15 minutes before slicing.
