Salted Dark Chocolate Peanut Butter Date Squares

Ingredients
- 500 g medjool dates pitted
- 3-4 heaped tbsp peanut butter
- 1 tbsp chopped nuts
- 150 g dark chocolate 80%
- 1 tsp coconut oil
- Salt
Instructions
- Pit the dates and add to a food processor along with 1 tbsp of peanut butter. Blitz until smooth.
- Spoon into a parchment lined 9×6 dish and spread evenly using wet hands.
- Add the peanut butter on top of the date caramel and spread evenly.
- Sprinkle over the chopped nuts and place in the freezer for a few hours or overnight to set.
- Melt the dark chocolate and coconut oil in the microwave (40 second intervals until fully melted)
- Remove the date and peanut butter layer from the freezer and slice into square like shapes.
- Dip the squares into the dark chocolate until fully coated and place on a parchment lined plate.
- Add a pinch of salt to the top and allow to set in the fridge.
- Enjoy with a tea or coffee
