Salted Dark Chocolate Peanut Butter Date Squares

Ingredients
 

  • 500 g medjool dates pitted
  • 3-4 heaped tbsp peanut butter
  • 1 tbsp chopped nuts
  • 150 g dark chocolate 80%
  • 1 tsp coconut oil
  • Salt

Instructions
 

  • Pit the dates and add to a food processor along with 1 tbsp of peanut butter. Blitz until smooth.
  • Spoon into a parchment lined 9×6 dish and spread evenly using wet hands.
  • Add the peanut butter on top of the date caramel and spread evenly.
  • Sprinkle over the chopped nuts and place in the freezer for a few hours or overnight to set.
  • Melt the dark chocolate and coconut oil in the microwave (40 second intervals until fully melted)
  • Remove the date and peanut butter layer from the freezer and slice into square like shapes.
  • Dip the squares into the dark chocolate until fully coated and place on a parchment lined plate.
  • Add a pinch of salt to the top and allow to set in the fridge.
  • Enjoy with a tea or coffee
